Washed processing plays a crucial role in refining Castillo’s character. Once harvested at peak ripeness, our cherries undergo meticulous selection before being submerged in fresh spring water, where any defective beans naturally separate. The fruit is then removed, and the beans are fermented in controlled conditions to develop their vibrant acidity and clean profile.

Finally, they are thoroughly washed, ensuring no residual mucilage remains before being sun-dried to lock in their nuanced flavors. This method highlights Castillo’s structured complexity, yielding a crisp, articulate cup with remarkable clarity.
